ABSTRACT
The densities and viscosities of ternary solutions (erythritol/xylitol/sorbitol/maltitol + vitamin B6 + water) were measured at 293.15 K, 303.15 K, 313.15 K, 323.15 K and atmospheric pressure. The experimental densities were correlated in terms of the Guimaraes equation, and the apparent molar volumes (Vf), the limiting partial molar volumes (Vf0), and the limiting partial molar volumes of transfer (?trVf0) were calculated through the densities. The experimental viscosities were correlated according to the extended Jones Dole equation to obtain the viscosity B coefficients, and the free energies of activation per mole of solute (?micro20?) and per mole of solvent (?micro10?) were calculated. These obtained thermodynamical properties and transport properties of multicomponents are useful to understand the structural change and strong solute solvent interaction in the ternary solutions (sugar alcohols + vitamin B6 + water).
